Spinach Fettuccine with Tomato Basil Bean Sauce

Here is a great pasta dish from Easy Veggie Meal Plans; one of the tastiest pasta dishes I’ve had in a LONG time (with plenty of protein to boot).

Spinach Fettuccine with Tomato Basil Bean Sauce

Ingredients:

• 6 oz. spinach fettuccine (uncooked weight)
• 1 small green pepper, chopped
• 1 small onion, chopped
• 1 Tbsp. olive oil
• 2 cups pasta sauce (no high fructose corn syrup)
• 1 3/4 cup or(15 oz.) black beans, rinsed and drained
• 2 Tbsp. minced fresh basil or 2 tsp. dried basil
• 1 tsp. dried oregano
• 1/2 tsp. fennel seed
• 1/4 tsp. garlic salt
• Dash pepper
• 1/2 cup (4 oz.) shredded part-skim mozzarella
cheese or vegan mozzarella cheese

Preparation:

1) Cook fettuccine according to package directions.

2) Meanwhile, in a large saucepan, sauté green pepper and onion in oil until tender.

3) Stir in the pasta sauce, black beans and seasonings.  Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.

4) Drain fettuccine.

5) Top with sauce and sprinkle with mozzarella cheese.

Makes 5 servings.
