Asian Shrimp Stir-Fry

Ingredients
2 tsp peanut oil
1/4 tsp red pepper flakes
1/2 cup French-cut green beans
1/3 cup matchstick carrots
1/4 cup whole, unsalted cashews
2 tsp reduced sodium soy sauce
2 tsp orange juice
1/4 tsp orange zest
1 1/2 cups medium pre-cooked shrimp, tail removed
1 cup microwavable brown rice
Prep Time: 20 minutes
Servings: 1

Instructions
In a medium skillet over medium-high heat, combine the oil and red pepper flakes.  Add all ingredients to skillet except the shrimp and rice and cook for 2-3 minutes, stirring frequently.

While that is cooking, heat the rice in the microwave according to the directions.  Add shrimp to the skillet and cook for another 2 – 3 minutes, stirring often.  Serve over the brown rice.
