Ingredients
2 large eggs (fried)
1 cup microwavable brown rice (cooked)
1/3 cup red beans
1 tsp chopped cilantro
1 Tbsp shredded low fat Mexican cheese blend

Instructions
Fry the two eggs in a pan coated with Pam non-stick cooking spray over medium heat for five minutes. While the eggs are frying, heat the rice in the microwave according to the instructions on the package. You can heat the beans as well after the rice if you desire.
When the eggs are done, mix together the rice and beans and top with the eggs, cheese and cilantro.
