Ingredients
1 lb beef sirloin, cubed
1 large chopped onion
3 cups sliced mushrooms
1 sliced carrot
4 cloves chopped garlic
1/2 cup beef broth, from bouillon
1 cup whole plain yogurt
1/2 cup shredded part skim mozzarella cheese
Salt & pepper to taste

Instructions
Brown the beef in a large nonstick skillet coated with cooking spray over medium-high heat for about 5 minutes. Add the onion, mushrooms, carrots and garlic, and continue frying for an additional 6-8 minutes until vegetables start to brown. Add the beef broth, salt, and pepper, bring to a low boil, and then add the yogurt 1 tbsp at a time, stirring constantly. Cover and simmer for 15 minutes on medium-low heat. Remove the lid, add the cheese, and stir until thoroughly blended.
