Ingredients
6 oz grilled chicken breast, cubed
1.5 cups cooked brown rice
1/2 cup frozen peas and carrots
1 stalk chopped celery
½ medium red bell pepper, chopped
2 tbsp barbecue sauce
Prep Time: Under 5 minutes
Servings: 1

Instructions
Stir all of the ingredients together in a small pan or pot over medium-low heat, until everything is warm. It can also be heated in the microwave for a couple of minutes as well.

This is a very simple recipe that can easily be prepared in just a few minutes. Since we are using precooked chicken and rice, along with frozen peas & carrots and pre-choppedĀ  vegetables, this would be perfect for a quick lunch at the office.
